The Recipe That Contains All Three:
Pineapple Lassi

A frothy South Indian yogurt-based beverage, Lassi often contains seasonal fruit and spices. This recipe yields a drink that’s a bit thinner than the average smoothie. (Yields 3, 1½ cup servings.)

Ingredients
– 2 cups vanilla low-fat yogurt (or for added protein, use Greek yogurt flavored with vanilla extract)
– 1 cup of chopped fresh pineapple – keep some juice to use as well (or for convenience, you can use 1 canned crushed pineapple in juice, undrained)
– 1/4 cup light coconut milk
– 1/8 to 1/4 teaspoon bottled ground fresh ginger
– 6 ice cubes

Instructions
Combine all ingredients in a blender; process until well blended. Serve immediately.
