Mermaid Chicken Salad

We’ve put a healthier spin on the classic chicken salad. Serve it chilled and spoon it on a lettuce leaf with a few cherry tomatoes on the side, or make a sandwich with it using some tasty whole grain bread.  Our Land & SEAsoning spice mix adds flavor and nutrition. Simple and easy. This recipe serves four.

Ingredients:

4 skinless chicken breasts cooked and diced

¾ to 1 cup plain Greek yogurt

1 cup of chopped celery

½ cup of chopped purple onion (optional, it’s your preference)

2 teaspoons Land & SEAsoning

1 tablespoon of Avocado Oil (or Olive Oil)

Salt and pepper to taste

Directions:

  1.  In a bowl add the yogurt, Land & SEAsoning and oil and whisk until combined.
  2. Add the chicken, celery and purple onion, mix well – taste, if needed add a little salt and white pepper.
  3. Chill well for several hours before serving – spoon the salad on a lettuce leaf (or you can make sandwiches using it). Sprinkle a little Land & Seasoning on it for added color and taste.
