Merman Salsa

I like to make homemade salsa in the summer, when tomatoes are so yummy. However, Jay our “Merman” created this recipe which uses canned tomatoes. It is quite tasty, and since it includes some of our Land & SEAsoning, it boosts nutrition as well. (You have to have some salsa for the Super Bowl!)

Ingredients

  • 3 to 4 each, dried chilis such as ancho, poblano, Anaheim, etc.
  • 1/2 Serrano pepper, seeded (add more Serrano if a spicier version is desired)
  • 6 large cloves of garlic
  • 2 medium white onions
  • 1 can chipotle pepper in adobe sauce
  • 1 large can whole peeled tomatoes, with juice
  • 2 Tbsp. Mexican oregano
  • Olive Oil
  • 1 Tbsp. Midwest Mermaid Muse Land & SEAsoning

Instructions

  • Peel and chop onion
  • Peel and chop garlic
  • Soak peppers in water for approximately 20 minutes
  • Sautee garlic, onions, Serrano, Land & SEAsoning and Mexican oregano in olive oil, cooking until onions begin to turn clear
  • Once chilis have begun to turn soft, remove from water and then remove seeds and stems. Place chilis on cookie sheet and broil or bake (at 500 degrees) until chilis just began to clear
  • Place all the ingredients into a blender and blend until salsa is smooth but lightly chunky.
  • Taste and add additional seasoning if needed
